Boil water and place the LIVE crab on the steamer. Cook for 30 minutes covered. When done, dip crab meat into: lemon juice, pepper, and salt.

Now, why should the crab be LIVE when it's being steamed? I know it sounds cruel and I don't like it either, but for taste reasons, I have found that it's better when cooked alive.

I used to kill the crab by driving a knife through its chest and then boiling it, but I have found that it often leaves a terrible, bitter taste because the steam collected as liquid inside the crab... The meat also turns chewy rather than nicely textured.

Michael

PS: I love crabs!

Me too! I started doing serious cooking not too long ago and it's now one of my favorite things to do :)

Ewww... "drive a knife through its chest". I already know that I would not be able to do it. I would make such a fuss and probably get myself too upset to eat it afterwards. I do LOVE crab through. Lately I have been eating a lot of seafood, salmon in particular. If I eat one more piece of fish, I might just start turning into a fish myself.

Thanks for the killer recipe. :)

It wasn't easy the first time I drove the knife through the crab, but eventually I got used to it.

French ppl just boil it with water and some aromatic herbes called "laurier" (Jules Caesar used to wear a crown made form this plant and it was used for the Olympic Games in Olympia). And then you eat it with mayonnaise ! Miaaaaaam

I prefer the way my mother cook it, it is chopped into pieces and there is a sauce which is usually pretty spicy :)

Yup, and that's the sauce that was made when we had crabs at my apartment ;) Still could use a LITTLE more work, but it was pretty good nonetheless.

In America, they prefer eating lobsters with butter. Never liked it that way...
